Spanish Pork Chops
This is another of my grandmother’s tasty and easy recipes. 

    3 pork chops
    3 large potatoes
    3 garlic cloves, minced
    salt
    3 tbl olive oil
    2 lemons

Wash potatoes and cut lengthwise and place along the bottom of a heavy bottomed dutch oven.  Quarter one of the lemons and add to the bottom of the pot.

Place pork chops on top of potatoes.  Sprinkle chops with salt and minced garlic.

Pour the olive oil and the juice of the other lemon over the chops. 

Bake in 300 degree oven for 1 hour 45 minutes to 2 hours, basting occasionally.

Variations:

    The night before, sprinkle chops with fennel pollen
    Substitute 2 large chopped carrots or other root vegetables for one of the potatoes.
